Red Hook Grappa

We are very excited to have our grappa in stores now!  At Dry Dock in Red Hook and at Goat Town, we have a grappa made from Red Hook Winery grape skins. 

Elsewhere, we are offering a grappa made in collaboration with Lieb Cellars on the North Fork.  It's a single varietal made from Pinot Blanc.

Whiskey!

The Stillhouse smells amazing!  New American whiskey in the fermentors and all the malty goodness in the air.

Distiller's Notes — Van Brunt Stillhouse

Lots of excitement at The Stillhouse as Fall approaches.  We're very excited to start a Grappa project in collaboration with Lieb Cellars.  We're creating the grappa from their Pinot Blanc grapes.  We're off to a good start and look forward to having some Grappa by the holidays.​

Kickerbocker

Red Hook CSA had fresh raspberries!

I'm kicking back with a knickerbocker:

2 oz Due North Rum

1/2 oz Orange Curacao

3/4 oz Lemon juice

8 Raspberries

Muddle 7 raspberries  with lemon juice and curacao in mixing glass.

Add Rum and Shake well with ice.

Strain into cocktail glass.

Garnish with Raspberry

Malt Whisky has been put to bed

The Six Point Single Malt Whisky has been put to bed in oak casks.  It will hang out and mellow over the next year or so until it's ready to make it's debut.

Creating a Malt Whiskey

A malt whiskey gets it's start as a simple malted barley beer (minus the hops).  The Six Point beer that was brewed last week is now being double distilled in our German still.

Van Brunt Stillhouse

The Stillhouse is collaborating with Six Point Brewery to create our first Malt Whiskey!  Ian McConnell of Six Point is mashing in the malt to begin the journey from grain to spirit.

RYE!

A new batch of rye is in the still today!  100% rye goodness.  The smell is amazing.  After some time in our oak barrels, this rye will be in a store near you in the spring of 2013.
